Add some brownie points when the meal is super simple and only takes about 35 minutes to whip up (after marinating). This is an island-inspired, low-calorie protein dish everyone will love.

  • Green bell pepper – A personal favorite of mine and probably the most underrated bell pepper, its subtle hints of sweet notes make the perfect addition to these kabobs.
  • Wooden skewers Pro Tip: soak your wooden skewers in water prior to hitting the grill so they don’t burn through.

Ingredients

  • 2 Chicken breasts chopped 1″ cubes
  • 1 Pineapple Cubed
  • 2 Green bell peppers Diced
  • 1 Red onion Diced
  • 1 tsp Avocado oil
  • 1/2 Cup Trader Joe’s Soyaki

Step-By-Step Instructions

  1. Chop chicken into 1″ cubes or desired bite-size
  2. Place chicken in a gallon-size resealable bag with soyaki and let marinate for about one hour. Soak wooden skewers in water for the same amount of time so they won’t burn when grilling.
  3. Dice green bell pepper, onion, pineapple, and coat lightly with avocado oil.
  4. Preheat the grill to low-medium.
  5. Thread vegetables and marinated chicken.
  6. Brush grill grates with avocado oil then place skewers on grill. Grill for 5 minutes then brush along tops with soyaki marinade. Rotate to the opposite side and brush the remaining side.
  7. Allow to grill about 4 minutes longer, or until chicken registers, 165°F (75°C) in the center on an instant-read thermometer. Serve warm.
