BBQ Chicken Pineapple Kabobs

There’s nothing like firing up the grill on a summer evening, especially when you have something delicious to throw on it. Add some brownie points when the meal is super simple and only takes about 35 minutes to whip up (after marinating). This is an island-inspired, low-calorie high protein dish everyone will love.

Ingredient Notes

  • Trader Joe’s Soyaki – This stuff is great for marinates or an easy stir-fry sauce topper.
  • Green bell pepper – A personal favorite of mine and probably the most underrated bell pepper, its subtle hints of sweet notes make the perfect addition to these kabobs.
  • Wooden skewers Pro Tip: soak your wooden skewers in water prior to hitting the grill so they don’t burn through.

Ingredients

  • 2 Chicken Breast Chopped 1″ cubes
  • 1 Pineapple Cubed
  • 2 Green bell peppers Diced
  • 1 Red onion Diced
  • 1 tsp Avocado oil
  • 1/2 Cup Trader Joe’s Soyaki

Step-By-Step Instructions

  1. Chop chicken into 1″ cubes or desired bite size
  2. Place chicken in a gallon-size resealable bag with soyaki and let marinate for about one hour. Soak wooden skewers in water for the same amount of time so they won’t burn when grilling.
  3. Dice green bell pepper, onion, pineapple, and coat lightly with avocado oil.
  4. Preheat grill to low-medium.
  5. Thread vegetables and marinated chicken.
  6. Brush grill grates with avocado oil then place skewers on grill. Grill for 5 minutes then brush along tops with soyaki marinade. Rotate to the opposite side and brush the remaining side.
  7. Allow to grill about 4 minutes longer, or until chicken registers, 165°F (75°C) in the center on an instant-read thermometer. Serve warm.

Substitution & Variations

  • Coconut Aminos – I love this stuff. You can find it at your local Kroger, Sprouts, or even Trader Joe’s. If you want to skip a pre-made sauce like the soyaki coconut aminos makes a tasty and healthier option.
  • Green bell pepper – Add your favorite veggies, mushrooms, zucchini, and squash are all great options on a kabob.

Frequently Asked Questions

What are some good ways to tenderize a chicken breast?

A few easy ways to tenderize a thick chicken breast is to place it in a plastic bag or plastic wrap and pound it out. I also like to marinate it (overnight if possible) to get some extra moisture. You can also brine it.

What are some side dishes for chicken kebab?

I love this watermelon salad, roasted potatoes or simple white/brown rice are a few things that come to mind.

What are some good alternatives for grilling chicken?

Bake it or pan-fry. If you’re baking it I would recommend using a meat thermometer to make sure it’s cooked thoroughly. You can also use it for panfrying or just make sure to use a timer. I start with 5 minutes for thinly sliced chicken and 7-8 for an inch or thicker.`
