Easy Korean Ground Beef Bowl

  • Ground beef – Korean food is some of the healthiest cuisines on earth. The culture tends to emphasize vegetables and meats cooked without the use of much oil. Many dishes contain just a few select ingredients. Simple and easy but definitely not boring! Like many Korean dishes, this ground beef bowl is bold and totally crave-worthy…you’ll have this one on repeat all week, trust me!

Substitution and variations:

  • Soy Sauce – Try using tamari for a gluten-free version of the same flavor.
  • Freshly grated ginger – I’m always looking for convenient shortcuts in the kitchen. Spoiler alert: I don’t looooove cooking-I do it out of the necessity for healthier options. So when it comes to freshly grated or minced anything I grab the ingredient in a paste form if I can. Look for a tube in the spice aisle for some ginger paste and call it a day!
  • Ground beef – This dish was originally inspired by Skinny Taste, a recipe creator I’ve long admired. With a twist on her “skinny” ingredients, my recipe goes for a “leaner” vs “skinny” vibe. One might even like to swap the ground beef for some lean turkey meat to cut some of the fat.

What you need for this Korean Ground Beef Bowl:

  • 1/4 c low sodium soy sauce
  • 3 tbsp coconut animos
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1/2 tsp crushed red pepper
  • 1 lb ground beef
  • 1/4 yellow onion
  • 1 tbsp minced garlic
  • 1 tbsp freshly grated ginger
  • freshly sliced cucumber
  • 2 tbsp green onion

Step-by-step instructions:

  1. Cook brown jasmine rice according to instructions on the package.
  2. Combine the soy sauce, 2 tablespoons of water, coconut aminos, toasted sesame oil, and red pepper flakes in a small bowl, whisk together and set aside.
  3. Heat a large deep nonstick skillet over med/high heat, add the ground beef and cook for about 5 minutes then drain the meat.
  4. Add onions, garlic, honey, and ginger. Cook for about 1-2mintues.
  5. Pour the sauce mixture over the beef, bring to a light boil then simmer on low heat for 10 minutes.
  6. Plate desired rice and ground beef mixture amount, add sliced cucumber, and top with chopped green onion.
  7. Serve immediately, and enjoy!
