Savory Southwest Breakfast Bowl Recipe

This savory southwest breakfast bowl recipe is the ideal meal, it’s packed with protein, good carbs and is so versatile. Throw an egg on top for a hearty breakfast, or drizzle with Bolthouse cilantro dressing and serve with some of your fave corn chips for a quick lunch. It makes the perfect post-workout meal and the best part is that it can be ready to eat in about 15 minutes. It’s quick, easy and with minimal ingredients, you can save some time in the kitchen and spend more time doing you!

Ingredient notes:

  • Egg – The egg is totally optional, scrambled or over easy, the choice is yours… or lost it altogether, more times than not I enjoy this dish as a “taco turkey bowl”.
  • Cheese – Feta cheese is pictured here because of the flavor combination it offers in a savory dish, other choices are shredded Mexican cheese or jack cheese.
  • Chilis – Fear not, green hatch chilis are considered a mild pepper. Full of flavor without the heat, they are easy to use and add a little something extra to any dish.

What you need for this savory southwest breakfast bowl recipe:

  • 1 Can Corn
  • 1 Can of Black beans
  • 1 medium-sized sweet potato
  • 1 lb Lean ground turkey
  • 1 Can of diced tomatoes
  • 1 Jalepano Optional
  • 1 Can Green hatch chilis
  • 1/4 Yellow onion
  • 1/2 Package of Trader Joe’s taco seasoning
  • 2 Spritz Olive or avocado oil

Step-by-step instructions:

  1. Warm your pan on medium heat and spritz with olive/avocado oil.
  2. Cube the sweet potato and place in a heated pan, give a few 1-2 more spritz of oil and stir or toss to coat all the cubes. Saute and toss for about 5-7 minutes or until sweet potato cubes are thoroughly cooked. I add a little water and place a lid to make sure it cooks the cubes well. You can also roast the cubes in an oven if you prefer, the goal is just to cook them first to add to the next step’s mixture. Set aside when done.
  3. Dice onions, give another spritz of oil, and add to the pan. Cook until they are translucent then add your turkey meat.
  4. Brown turkey meat, add 1/2 package of Trader Joe’s taco seasoning, and a can of tomatoes, and cook through.
  5. Add the can of corn, black beans, green hatch chilis, and cooked sweet potato, and stir until completely mixed.
  6. Cook eggs to the desired temp, plate, and serve.
