Girl Scout Samoas Cookie Recipe [Homemade]

Satisfy your sweet tooth with this homemade Samoas cookie recipe. It’s a copycat version of the famous Girl Scout cookie everyone loves but with healthier ingredients…of course. You only need 4 ingredients, a blender, some parchment paper, and a little freezer space.

Recipe creator, eatingbirdfood.com knew what she was doing when she threw 4 simple ingredients together and came up with these healthy and absolutely delicious cookies. I was pleasantly surprised at how these came out. Consistency and flavor are perfection, a must-try for sure!

Ingredient notes:

Dates – No high fructose corn syrup here, dates are naturally sweet with lots of fiber so you can feel good about these tasty little treats.

Lily’s chocolate chips – I LOVE Lily’s baking goods brand. They really know what it takes to make chocolate chips and other baking goods wholesome and sweet without all the additives. They are a must-have in your baking repertoire and the perfect treat to satisfy a sweet tooth.

Coconut chips – The coconut chips used in this Samoas cookie recipe are unsweetened and just lightly baked to give them a nice toasted flavor.

What you need for this Samoas Cookie Recipe:

  • Pitted dates
  • Lily’s milk chocolate chips
  • Coconut Oil
  • Coconut Chips

How to make them:

  1. Toast coconut chips at 400 degrees for 4 minutes.
  2. Blend toasted coconut chips and dates in a blender until it makes a dough-like consistency.
  3. Spoon mixture, roll into a ball then flatten to cookie shape.
  4. Use a chopstick or straw to create circles in the middle of each cookie.
  5. Place in the freezer for 10 minutes to harden.
  6. In a mixing bowl combine coconut oil and chocolate chips and pop in the microwave for 30 seconds, stir well until all chips are melted.
  7. Dip the bottom of each cookie in the melted chocolate, and lay the cookie on the sheet chocolate side up. Pop back in the freezer for another 10 minutes.
  8. Flip cookies around and drizzle the remaining chocolate on the cookies, and place them back in the freezer for 10 minutes.
  9. Enjoy.
