Trade boring in for something new, like this saucy coconut cilantro combo. It’s simple healthy chicken breast recipes like this that will keep you coming back for more.

Ingredient notes

  • Rice – Makes this such a good comfort go-to meal, especially with the colder days ahead of us. Although the recipe doesn’t call for any rice, I personally loved this dish served over brown jasmine. Pro Tip: Serve it in a bowl, give it a good stir to mix it up, and spoon eat it to make every bit perfect delish.
  • Lemongrass paste – I could not find fresh lemongrass at any of my local stores, but I did find some very handy lemongrass paste which I personally like better for convience puropses.
  • Arrowroot – Is a natural sauce thickener, you can find it at your local health food store like Sprouts, Wholefoods or Mothers Market. BUT when in doubt, Amazon it!

Substitution and variations:

  • Coconut milk – Full fat or low fat options, the choice is yours.
  • Chicken broth – If you have a favorite bone broath or even vegetable broath, you can use that.
  • Chicken breast – To add even more flavor, use chicken thigh meat.

What you need for this simple healthy chicken breast recipes:

  • 14 oz full-fat coconut milk (one can)
  • 1/2 C chicken broth
  • 1 lime
  • 2 tbsp honey
  • 1 tbsp arrowroot
  • 1 tbsp grated fresh ginger
  • 1 tsp lemongrass paste or 1 stalk of lemongrass, peeled and grated
  • 2 chicken breast
  • 4 green onions
  • 1 tbsp avocado oil
  • 1 tbsp minced garlic
  • 3 cups broccoli
  • freshly chopped cilantro

Step-by-step instructions:

  1. In a medium-sized bowl combine coconut milk, chicken stock, lime juice, arrowroot, ginger, and lemongrass then set aside.
  2. Bring a medium-sized saute pan the medium heat with a few spritzes of avocado oil. Season chicken with salt and pepper and place in pan for about 7 minutes (depending on the thickness of chicken). When done, remove from pan and let sit for 5 minutes, chop, and set aside.
  3. Give your pan another spritz of avocado oil, add in the white parts of the green onion with minced garlic and saute for 2 minutes. Pour the coconut lime mixture and let cook until the sauce reaches a simmer.
  4. In a small bowl, add broccoli with 1/2 cup of water and place in the microwave for 1.5 minutes. Drain water and combine it with the cooking sauce, coat thoroughly and place the lid to cover for 2 minutes.
  5. Add chicken to the mixture, and coat well.
  6. Serve over rice. Garnish with fresh cilantro and green onion.
