  • Cilantro – It’s a love or hate when it comes to cilantro BUT this recipe wouldn’t be the same without it.
  • Lemon – Lime is a bit more tart but can easily be swapped or preferred for this recipe, the choice is yours.
  • Red/Green Cabbage– I like to mix the two because it makes the dish vibrantly beautiful but you can absolutely go with one or the other.

  • Juice of 2 large lemons or lime

  1. Finely chop red and green cabbage, cilantro, and jalapeno and add to a large mixing bowl.
  2. Add pre-shredded carrots and canned crushed pineapple.
  3. Juice lemon or lime juice and add to the mixing bowl.
  4. Adjust ingredients as necessary by adding more of anything to satisfy your dish.
  5. Chill for 1-2 hours or overnight.
  6. Serve chilled.
