Samoas Cookie Recipe
The tastiest coconut date cookie you ever did have!

- 1 cup Dates
- 1 cup Unsweetened coconut chips
- 1/3 cup Lilys milk choclate chips
- 1/2 tsp Coconut oil
Toast coconut chips at 400 degrees for 4 minutes.
Blend toasted coconut chips and dates in a blender until it makes a dough-like consistency.
Spoon mixture, roll into a ball then flatten to cookie shape.
Use a chopstick or straw to create circles in the middle of each cookie. Place in the freezer for 10 minutes to harden.
In a mixing bowl combine coconut oil and chocolate chips and pop in the microwave for 30 seconds, stir well until all chips are melted.
Dip the bottom of each cookie in the melted chocolate, and lay the cookie on the sheet chocolate side up.
Pop back in the freezer for another 10 minutes.
Flip cookies around and drizzle the remaining chocolate on the cookies, and place them back in the freezer for 10 mintues.
