Watermelon Salad with Red Onion and Feta

Juicy, crispy ad absolutely delicious, this fresh summer salad is a fa favorite and will be the only way you'll want to enjoy your watermelon season.

Ingredients
  

  • 1/2 Watermelon
  • 2 Persian cucumbers
  • 1/4 Red onion, thinly sliced
  • 1/2 Cup Red wine vinegar
  • Fresh basil Measure with your heart
  • Fresh mint Measure with your heart
  • S & P to taste

Instructions
 

  • Using a cutting board and knife, remove ends and slice cucumbers down the middle then slice to make half-moon shape bites. Place in a large bowl.
  • Thinly slice the red onion and add to the large bowl.
  • Add red wine vinegar to the veggie mixture with salt and pepper, mix and set aside.
  • Cube the watermelon and place it in the bowl with the veggie mixture.
  • Pick basil leaves, roll them tightly together, and chopped into ribbons, then add to the watermelon mixture.
  • Pick and finely chop mint leaves, then add them to the bowl.
  • Optional: Add feta cheese crumbles and or coat with olive oil.
  • Mix together, serve immediately, and enjoy!
