Watermelon Salad with Red Onion and Feta
Juicy, crispy ad absolutely delicious, this fresh summer salad is a fa favorite and will be the only way you'll want to enjoy your watermelon season.

- 1/2 Watermelon
- 2 Persian cucumbers
- 1/4 Red onion, thinly sliced
- 1/2 Cup Red wine vinegar
- Fresh basil Measure with your heart
- Fresh mint Measure with your heart
- S & P to taste
Using a cutting board and knife, remove ends and slice cucumbers down the middle then slice to make half-moon shape bites. Place in a large bowl.
Thinly slice the red onion and add to the large bowl.
Add red wine vinegar to the veggie mixture with salt and pepper, mix and set aside.
Cube the watermelon and place it in the bowl with the veggie mixture.
Pick basil leaves, roll them tightly together, and chopped into ribbons, then add to the watermelon mixture.
Pick and finely chop mint leaves, then add them to the bowl.
Optional: Add feta cheese crumbles and or coat with olive oil.
Mix together, serve immediately, and enjoy!
