Easy Cucumber Salad

1 Cutting board
1 Sharp knife
- 2 Large cucumbers
- 1/2 Red onion
- 1 Cup Freshly chopped dill
- 1 Cup Trader Joe's White Modena Vinegar
- Salt and pepper to taste
- Olive oil optional
Using a mandoline, slice 2 cucumbers and 1/2 a red onion then place in a large mixing bowl.
Finely chop about 1 cup of fresh dill, add to cucumber and red onion bowl.
Liberally coat veggie and herb mixture with vinegar, add salt and pepper to taste and stir well.
Store in shallow bowl with a lid in the fridge for at least 2 hours for best flavor.
