Easy Cucumber Salad

Equipment

  • 1 Mandoline
  • 1 Cutting board
  • 1 Sharp knife

Ingredients
  

  • 2 Large cucumbers
  • 1/2 Red onion
  • 1 Cup Freshly chopped dill
  • 1 Cup Trader Joe's White Modena Vinegar
  • Salt and pepper to taste
  • Olive oil optional

Instructions
 

  • Using a mandoline, slice 2 cucumbers and 1/2 a red onion then place in a large mixing bowl.
  • Finely chop about 1 cup of fresh dill, add to cucumber and red onion bowl.
  • Liberally coat veggie and herb mixture with vinegar, add salt and pepper to taste and stir well.
  • Store in shallow bowl with a lid in the fridge for at least 2 hours for best flavor.
