Korean Ground Beef Bowl

Savory with just a little bit of sweetness, this Korean ground beef bowl is packed with protein, some complex carbs, and a side of crispy veggies...in this case fresh cucumber. You can feel good and satiated any day of the week.

- 1 lb ground beef
- 1/4 c low sodium soy sauce
- 3 tbsp coconut animos
- 1 tbsp honey
- 1 tsp toasted sesame oil
- 1/2 tsp crushed red pepper
- 1/4 yellow onion
- 1 tbsp minced garlic
- 1 tbsp freshly grated ginger
- freshly sliced cucumber
- 2 tbsp green onion
Cook brown jasmine rice according to instructions on the package.
Combine the soy sauce, 2 tablespoons water, toasted sesame oil, and red pepper flakes in a small bowl, whisk together and set aside.
Heat a large deep nonstick skillet over med/high heat, add the ground beef and cook for about 5 minutes then drain the meat.
Add onions, garlic, ginger, and honey. Cook for about 1-2mintues.
Pour the sauce mixture over the beef, bring to a light boil then simmer on low heat for 10 minutes.
Plate desired rice and ground beef mixture amount, add sliced cucumber, and top with chopped green onion.
Serve immediately, and enjoy!
