Korean Ground Beef Bowl

Savory with just a little bit of sweetness, this Korean ground beef bowl is packed with protein, some complex carbs, and a side of crispy veggies...in this case fresh cucumber. You can feel good and satiated any day of the week.

Ingredients
  

  • 1 lb ground beef
  • 1/4 c low sodium soy sauce
  • 3 tbsp coconut animos
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1/2 tsp crushed red pepper
  • 1/4 yellow onion
  • 1 tbsp minced garlic
  • 1 tbsp freshly grated ginger
  • freshly sliced cucumber
  • 2 tbsp green onion

Instructions
 

  • Cook brown jasmine rice according to instructions on the package.
  • Combine the soy sauce, 2 tablespoons water, toasted sesame oil, and red pepper flakes in a small bowl, whisk together and set aside.
  • Heat a large deep nonstick skillet over med/high heat, add the ground beef and cook for about 5 minutes then drain the meat.
  • Add onions, garlic, ginger, and honey. Cook for about 1-2mintues.
  • Pour the sauce mixture over the beef, bring to a light boil then simmer on low heat for 10 minutes.
  • Plate desired rice and ground beef mixture amount, add sliced cucumber, and top with chopped green onion.
  • Serve immediately, and enjoy!
