Greek Zoodle Salad
A modern fresh vegetable take on a classic greek salad...but make it pretty, and delish!

- 3 Zucchini
- 1/2 Jar marinated artichoke hearts
- 1/2 Red onion
- 3/4 Cup Cherry tomatoes
- 1/3 Cup Kalamata olives
- 1/3 Cup Pepperoncini
- Salt and pepper to taste
- 1/2 Cup Greek Dressing
Spiral the zucchini into noodle shaped strands and prep other veggies if needed.
Place zoodle noodle into a large bowl, combine artichoke hearts, onion, tomatoes, olives and pepperonicinis.
Whisk together the dressing and pour over the salad mixture.
Serve immediately, or refrigerate in an air-tight container for up to 1 week.
