Greek Zoodle Salad

A modern fresh vegetable take on a classic greek salad...but make it pretty, and delish!

Ingredients
  

  • 3 Zucchini
  • 1/2 Jar marinated artichoke hearts
  • 1/2 Red onion
  • 3/4 Cup Cherry tomatoes
  • 1/3 Cup Kalamata olives
  • 1/3 Cup Pepperoncini
  • Salt and pepper to taste
  • 1/2 Cup Greek Dressing

Instructions
 

  • Spiral the zucchini into noodle shaped strands and prep other veggies if needed.
  • Place zoodle noodle into a large bowl, combine artichoke hearts, onion, tomatoes, olives and pepperonicinis.
  • Whisk together the dressing and pour over the salad mixture.
  • Serve immediately, or refrigerate in an air-tight container for up to 1 week.
