Traditionally a Middle-Eastern/ Mediterranean dish made with mashed chick peas, tahini, lemon and a few spices. This recipe is as traditional as it gets but feel free to add roasted bell peppers, cilantro or your favorite flavors.

Ingredients

  • 1 can of chickpeas (15 ounces)
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1/3 c tahini
  • Juice one lemon or 2-3 tablespoons
  • 1/4 c cold water
  • 4 cloves of garlic
  • 1 Pinch of white pepper
  • Salt to taste
  • Garnish with fresh parsley, smoked paprika, and pine nuts (optional)

Instructions

  • Puree the first seven ingredients in a food processor or high-speed blender until smooth.
  • Tahini, cold water, olive oil, cumin, salt, garlic, and lemon.
  • Add in the chickpeas. One can, rinsed in warm water and drained.
  • Puree for 3-4 minutes, or until smooth. Just keep it going until the hummus is nice and smooth, pausing once or twice to scrape the sides down. If the hummus seems too thick, feel free to add in an extra tablespoon or two of water too. Taste and season.
  • Add in extra salt, cumin, and/or lemon juice if needed.
  • Garnish and serve. Transfer it to a serving bowl, add any toppings you'd like, and enjoy!
