Egg White Muffin Cups

- 6 Eggs
- 1/2 1/2 Bell pepper
- 1/4 1 Red onion
- 2 tbsp Feta cheese
- 1/2 cup 2 % Cottage cheese
- 1 Spinach/mixed greens
- 2 tbsp Bacon bits
- 1/2 Avocado
- Salt, pepper, and garlic powder to taste
- Salsa of choice
Preheat oven to 350 degrees.
In a bowl crack 6 eggs and set aside while you chop veggies and any other ingredients you'd like.
Combine veggies/ingredients of choice, 1/2 cup of cottage cheese, feta cheese, salt, pepper, and garlic powder. Blend well.
Pour egg mixture into greased cupcake pan about 3/4 full.
Place in oven for 20-25 minutes
Remove muffins from the oven and let them cool for a few minutes prior to plating.
Top with salsa avocado, and enjoy.
