  • 6 eggs
  • 1/2 bell pepper
  • 1/4 red onion
  • 2 tbsp feta cheese
  • 1/2 cup cottage cheese
  • 1 cup spinach/mixed greens
  • 2 tbsp bacon bits
  • Salt, pepper, and garlic powder to taste
  • 1/2 avocado
  • Salsa of choice

Step-by-step instructions:

  1. Preheat the oven to 350 degrees.
  2. In a bowl crack 6 eggs and set aside while you chop veggies and any other ingredients you’d like.
  3. Combine veggies/ingredients of choice, 1/2 cup of cottage cheese, feta cheese, salt, pepper, and garlic powder. Blend well.
  4. Pour egg mixture into greased cupcake pan about 3/4 full.
  5. Place in oven for 20-25 minutes.
  6. Let muffins cool for a few minutes prior to plating.
  7. Top with salsa avocado, and enjoy.
