  • Potatoes: Yukon potatoes or red potatoes are ideal for this recipe. Potatoes are a very dense vegetable, when they’re moist they can soak up the dressing -the trick to flavorful potato salad is to let the cooked potatoes cool for a bit by popping them in the fridge so your dressing blends nicely.
  • Mayo: Any mayo will do, homemade, full fat, or low.
  • Vinegar: Vinegar can be omitted if you have some picky eaters. Mustard already has vinegar in it which will give it that tangy taste.

  • 4 Yukon Gold Potatoes peeled and cubed
  • 3 stalks of Celery diced
  • 1/2 small Red Onion diced
  • 6 Eggs hardboiled
  • 1.5 cups Mayo
  • 2 Tbsp Mustard
  • 1/2 cup sweet relish (optional but not Whole30 approved)
  • 1 Tbps Apple Cider Vinegar
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2-3 Tbsp Fresh Dill chopped (optional)

Step-by-step instructions:

  1. Boil 6 eggs for 13 minutes, then place in an ice bath for about 10 minutes.
  2. Bring another pot of water to a soft while you wash, peel, and cube potatoes. Place cubed potatoes into the water and cook until they are fork-tender, then drain.
  3. While the potatoes are cooling, combine mayo, mustard, apple cider vinegar, relish salt, and pepper in a large mixing bowl.
  4. Chop veggies and cleaned hard-boiled eggs, then combine them with cooked potatoes and mix to your desired consistency.
  5. At this point add any additional seasonings or more ingredients as needed.
  6. Let sit in the refrigerator for at least 30 minutes up to overnight before serving for the best flavor.
