Easy Cucumber Salad

This super quick and easy cucumber salad is crisp and refreshing, it’s the perfect weekly side dish staple and midday snack. All my fellow cucumber lovers will have this one on repeat!

Ingredient notes:

  • Cucumber – I typically buy the three-pack of large English cucumbers from Costco, and for this cucumber salad recipe that type of cucumber is best for marinating.
  • Fresh dill – Definitely go with a fresh herb option on this one dried dill just won’t cut it.
  • White Modena Vinegar from Trader Joe’s is the best and only vinegar I will use for this recipe. It has little sweet hints and is a total game-changer.

Ingredients

  • 2 Large cucumbers
  • 1/2 Red onion
  • 1 Cup Freshly chopped dill
  • 1 Cup Trader Joe’s White Modena Vinegar
  • Salt and pepper to taste
  • Olive oil optional

Step-by-step instructions

  1. Using a mandoline, slice 2 cucumbers and 1/2 a red onion then place in a large mixing bowl.
  2. Finely chop about 1 cup of fresh dill, and add to cucumber and red onion bowl.
  3. Liberally coat the veggie and herb mixture with vinegar, add salt and pepper to taste, and stir well.
  4. Store in a shallow bowl with a lid in the fridge for at least 2 hours for the best flavor.
