[Healthy] Sweet Potato Breakfast
Sweet, savory, and absolutely delicious, what else can you ask for in a breakfast dish? This sweet potato breakfast really comes together with the bacon and fried egg combo. Hearty yet surprising light, this dish will keep your satiated all morning long.

What you’ll need for this healthy sweet potato breakfast
- 6 eggs
- 2 chicken sausage links
- 1 sweet potato
- 1 cup organic kale
- 1/4 yellow onion
- 4 turkey bacon strips
- 1 tbsp olive oil
- salt & pepper to taste
- 1/4 tsp paprika or to taste
- 1/4 tsp garlic powder or to taste
Step-by-step instructions
- In a small pan, heat olive oil and add cubed sweet potato for about 5-7 or until a bit charred and soft.
- In a separate larger pan, heat the pan and cook bacon until 80% cooked. Remove bacon, drain oil, and return pan to heat.
- Add onion and cook until translucent. While that is cooking, chop bacon into bits.
- Cut and add chicken sausage, cooked sweet potato, bacon bits, and chopped kale.
- Toss around for about a minute then make space to crack eggs into. Crack eggs in the designated areas and cover on low for about 3-4 minutes.
- Serve warm, and enjoy!
