This easy cowboy caviar recipe is the ultimate summertime bbq side dish packed with a variety of yummy textures and flavors you’ll be loving this bean veggie blend all season long.

Ingredient notes:

Black eye peas – Switch up the beans, you can use pinto, garbanzo, white beans…whatever you like.

Mango – Mango is not traditionally in cowboy caviar but I like the hint of sweetness it gives. You can use pineapple or even peach if you want to give it a nice summer season twist.

Veggies- Cowboy caviar is one of those recipes that you can totally make your own. Easily swap out different veggies or add some extras…green bell peppers, jalapeno or even some cucumber come to mind and would be a nice addition or alternative.

Substitution and variations:

  • Jalapenos – Kick it up a notch with some serranos or habanero peppers. Alternatively, if you like the flavor of jalapenos but not the spice, roll the pepper on the counter using the palm of your hand so the seeds (the hot stuff) easily fall out when you slice the top off.
  • Pablano peppers – Are also a flavorful vegetable without the spice.

What you need for cowboy caviar:

  • 1 can of black beans
  • 1 can black eye peas
  • 1 can sweet corn (or roasted corn on the cob if you’re feeling extra)
  • 1 red bell pepper (or color of your choice)
  • Mango
  • Cilantro
  • Salt
  • White wine vinegar (pictured below is red wine vinegar and balsamic-I ended up doing a mix of all three but traditionally it calls for white wine vinegar
  • Red onion
  • Cherry tomatoes
  • Lime
  • Avocado
  • Olive oil

  1. In a large bowl, add mango, tomato, bell pepper, corn, black beans, cilantro, onion, olive oil, lime juice, cumin, salt, and hot pepper flakes.
  2. Gently stir to combine.
  3. Serve cold, enjoy!

Pro Tip:

  • If you have time, allow flavors to marry each other in the fridge for a few hours- it will taste much better after sitting for a while…kinda like chili.
  • Serve as a dip with a side of your favorite corn chips.
