Ingredient notes:
Feta – Feta cheese makes everything taste better…including this watermelon salad. Not pictured here but adding feta would definitely pull all the flavors together very nicely and make this juicy salad even better. Feel free to add it in or omit it as you see here.
Olive Oil – Similar recipes will call for a light coat of olive oil, again that is something I skipped to keep fat content at bay.
Persian cucumbers – Each ingredient is key to making this recipe as delicious as it looks but the Persian cucumbers are what give this watermelon salad a little something extra…the crunch! Do yourself a favor and spring the Persian cukes, you won’t be sorry!
Ingredients for this Watermelon Salad with Red Onion and Feta
- 1/2 Watermelon
- 2 Persian cucumbers
- 1/4 Red onion, thinly sliced
- 1/2 Cup Red wine vinegar
- Fresh basil
- Fresh mint
- S & P to taste

Just a couple of items were used in the 10 minutes it took me to whip this juicy salad up, here they are:
- Cutting board
- Knife
- Lemon juicer…game changer
- Vegetable peeler
Step-by-step instructions:
- Using a cutting board and knife, remove ends and slice cucumbers down the middle then slice to make half-moon shape bites. Place in a large bowl.
- Thinly slice the red onion and add to the large bowl.
- Add red wine vinegar to the veggie mixture with salt and pepper, mix and set aside.
- Cube the watermelon and place it in the bowl with the veggie mixture.
- Pick basil leaves, roll them tightly together, and chopped into ribbons, then add to the watermelon mixture.
- Pick and finely chop mint leaves, then add them to the bowl.
- Optional: Add feta cheese crumbles and or coat with olive oil.
- Mix together, serve immediately, and enjoy!
