ARUGULA BURRATA SALAD

- Heirloom tomatoes – Tomatoes are a key ingredient in any Caprese salad however heirloom tomatoes are not necessary, you can swap them out for regular beefsteaks.
- Peaches– Strawberries would make a great swap if you don’t have peaches or even some juicy watermelon would be a nice compliment.
What you need for this arugula burrata salad:
- 4 cups Arugula
- 2 Heirloom tomatoes
- 1 Container of burrata cheese
- 2 Peaches
- 1 Lemon
- 2 tbsp Balsamic glaze
- 2 tbsp fresh basil
- S&P to taste
Step-by-step instructions:
- In a large mixing bowl add arugula and juice of one lemon, then toss.
- Using your knife and cutting board, slice heirloom tomatoes, and peaches and finely chop the basil, then add to the arugula lemon mixture.
- Gently break open burrata balls and place them on top of the salad.
- Drizzle salad with balsamic glaze and serve immediately.

- Balsamic vinegar/reduction- A balsamic glaze was used for this recipe but you can definitely get away with a homemade reduction. All you need to do is pour vinegar into a small saucepan and bring it to a gentle boil over medium to medium-low heat. Let the balsamic reduce for a good ten to twenty minutes, depending on how much you’re reducing. It will slowly thicken.
